Skillet Brownie
One pan. Crisp edges, fudgy middle. Scoop straight from the pan.
Ingredients
- 12 tbspunsalted butter
- 1¼ cupssugar
- ¾ cupcocoa powderDutch-process
- ½ tspkosher salt
- 1 tspvanilla extract
- 2large eggs
- ½ cupall-purpose flour
- 4 ozbittersweet chocolatechopped
Equipment
- 10-inch cast-iron skillet
Method
Preheat the oven to 350 degrees.
Melt the butter in the skillet over low heat, then remove from the heat and whisk in the sugar, cocoa, and salt.
Whisk in the vanilla, then the eggs one at a time, until the batter turns glossy.
Fold in the flour, then the chocolate, and smooth the top.
Bake until the edges are set but the center is still fudgy, 20 minutes.
Cool for 10 minutes and scoop straight from the pan.
