Bacon-Wrapped Jalapeño Poppers
Half-strip of bacon. Cream cheese, cheddar, baked on a rack.
Ingredients
- 12jalapeñosmedium
- 8 ozcream cheesesoftened
- 1 cupsharp cheddarshredded
- ½ tspgarlic powder
- 12 slicesbaconcut in half crosswise
Equipment
- Wire rack
- Sheet pan
Method
Preheat the oven to 400 degrees and set a wire rack inside a sheet pan.
Halve the jalapeños lengthwise and scrape out the seeds and ribs. Wear gloves.
Mix the cream cheese, cheddar, and garlic powder until smooth.
Fill each half with the cheese mixture and wrap it in a half strip of bacon, seam side down.
Bake on the rack until the bacon is crisp, 25 to 30 minutes.
Rest for 5 minutes before serving.
